Port is one of the 3 major fortified wines of the world, and comes from the Douro Valley in Portugal. It holds a special place for enthusiasts who appreciate how special the wines are. Along with first growth Bordeaux, vintage Port is the most age-worthy wine in the world. What Makes Port Wine Unique?
FORTIFICATION
Port wine is fortified with grape spirit (aguardente) during fermentation, which stops the fermentation process, preserving the natural sugars of the grapes. This gives Port its characteristic sweetness and higher alcohol content, typically ranging from 19% to 20%.
VARIETALS AND STYLES
There are several styles of Port, including Ruby, Tawny, White, and Vintage. Each style has its own unique aging process and flavor profile:
Ruby Port is young and vibrant, with fruity flavors and a deep red color.
Tawny Port is aged in wooden casks, gaining oxidation and complexity, with nutty and caramel flavors. Aged Tawny Ports range from 10-40 years old.
White Port offers a lighter and often drier alternative, ideal for those who prefer something less sweet. Ideal as an apertif.
Late Bottle Vintage offers an opportunity to enjoy Port from a single vintage that has been aged in oak for 5 years. It provides a more drinkable option to vintage Port in its youth

TERROIR
The unique terroir of the Douro Valley, characterized by steep slopes, schistous soils, and a hot climate, contributes to the grapes’ distinct characteristics. The region’s specific microclimates allow a variety of grapes to flourish, producing rich and complex flavors in the wine. There are 6 main grape varieties that are grown in Porto,. The main varities are Toutiga Nacional, Touriga Francesa, Tinto Roriz, and Tinta Barroca.
TRADITION
Port wine has a storied history that dates back to the 17th century. The relationship and demand created by the British has played a considerable role in its popularity and demand.
Creative Ways to Serve Port Wine
While in Porto, I quickly learned that we in the US do not serve Port at the appropriate temperature. We serve it too warm (like many red table wines as well). Port in Porto is served chilled. What a difference this makes. It provides a lovely lift to the wines accentuating the acidity and making the wines more refreshing.
CLASSIC PAIRING
Pair Port wine with a selection of cheeses, such as blue cheese, aged Cheddar, or creamy Brie. The sweetness of a Ruby, LBV, or vintage Port with the saltiness of blue cheese, creating a delicious contrast.
DESSERT COMPANION
Serve Ruby or Tawny Port with richly flavored desserts like chocolate cake, bread pudding, or fruit tarts. Alternatively, White Port pairs well with lighter desserts like panna cotta or sorbet.
IN COCKTAILS

Cod is one of the signature dishes in Portugal, as its proximity to the Atlantic Ocean allows for easy assess to some of the finest fish and seafood.
